Here comes our Sunday special Lunch Roti with Dum Aloo!!!
ROTI-

Wheat flour- 3 cups
Salt-As required
Sugar-pinch
Water
Oil-2 tsps
Hot milk-1/2 cup
PROCEDURE-
Add all the above said ingredients except milk into a bowl.Mix all these ingredients well.Now add milk and the immediately cover it with a lid for 5 mins. Slowly add water and hand mix the flour in circular/rotating motion.Add 2 spoons of oil to the flour and grease your hands with oil and knead the dough.You need to knead for little longer time say 5-10 mins for soft rotis.Leave it for 30 mins and in the meanwhile you can start preparing your curry(Dum Aloo).Now divide the dough into small proportions (balls),flatten the surface of each ball,dust it with flour and with the help of rolling pin make them into circular discs (Roti).Apply oil to your palms while flattening the ball.Heat tawa, grease it with oil and now fry the prepared rotis by flipping until golden brown.Fry for little longer time for crisp rotis.
Your roti is Ready!!!
DUM ALOO

INGREDIENTS-
Potatoes- 4-5 medium sized (cut into 4 if big)
Onion-1 (big chopped)
Tomato,onion,garlic,Green chillies and cashew nut paste-1 cup
(cashews soaked for 30 mins prior to grinding.)
Oil-For frying
Garam masala-1 tsp
Mustard seeds-1/2 tsp
Red chilli powder-for taste
Turmeric powder-1/2 tsp
Salt-to taste
Water-1 cup
SPICES-
Cloves-6-8
Cardamom-5
Jeera-1/2 tsp
Coriander seeds-1/2 tsp
Cinnamon stick-small stick
Pepper-1/2 tsp
PROCEDURE-
Wash and peel potatoes.Cut them into cubes and prick all over.Meanwhile heat oil in a pan and fry them until golden brown in colour.Keep it aside.Fry in a pan all the spices till the pungent smell subsides.Allow them to cool and then grind them into powder.Now take a pan and add 3 tbsps oil/ghee then add mustard seeds, turmeric powder, red chilli powder, now add the above prepared paste/puree and cook for 5-6 mins. Now add fried potato,water and cook till this mixture condenses and then add 1 and 1/2 tsp of spice powder,adjust salt and mix.Allow it to cook for 3-4 mins.Finally add chopped coriander and transfer it to a serving bowl.
